I grew up on peanut butter fudge. Whenever Christmas rolled around, my mom made peanut butter fudge. There are many recipes, some with marshmallows, some with marshmallow crème, or Fluff, as we call it here in New England. But the easiest recipe, by far, is the one I have below. It takes 5-10 minutes and it's fabulous!
So now, I lovingly make it for her, as she did for us so many times before.
Mom's Peanut Butter Fudge
2 sticks of butter
1 cup of peanut butter
1 tsp. vanilla
1 pound of sifted powdered sugar
Melt the butter and peanut butter. Add the vanilla.
Mix into the sifted powdered sugar.
Pour into greased 8x8 or slightly larger pan. Chill 4 hours, or until hard enough to cut.
That's it! So easy and delicious...enjoy!
PS--You can probably add melted chocolate on top or mix in just about anything you want. We like it simple, so it's just peanut butter for us. Make it yours.
