Pesto Spaghetti Squash

Feeling inspired by the pending success of my pesto chicken, thanks to the sultry chef, Geoffrey Zakarian, I decided to carry the pesto goodness into a side dish. This is so easy, I'm almost embarrassed to post it. 

But, time is tight after work. And I would love it if someone posted a ridiculously easy recipe for a fabulous side dish or entree. So, if you like pesto, try this.

Pesto Spaghetti Squash

1 spaghetti squash
1/3 small container of pesto
1/3 cup chopped walnuts
1 small container crumbled feta cheese




  • Cook the spaghetti squash in the microwave. Super easy. 
  • Slice the squash in half, dig out and discard the seeds. 
  • Place the shells in a microwave safe dish. Add a layer of water and try for 10 minutes. Add time as needed until the squash is soft. 
  • Scoop the hot squash into a mixing bowl using a fork to create the spaghetti strands. 
  • Mix in the remaining 1/3 of the small container of pesto you used for the chicken. 
  • Add 2/3 of a small container to a full container of feta. Mix.
  • Add the chopped walnuts. Mix.




Voila. That's it. The food photography isn't great, but the flavor is. 

And, this is a great side dish to accompany the pesto chicken. Between the chicken and the squash, it's a lot of pesto flavor. But, it's fabulous.
